The vintage conditions, the phases of humidity and dryness dictate the evolution of grapes affected by noble rot, with more or less advanced concentration.\u003cbr\u003eThe glorious history of Anjou and Layon wines was built on this type of demi-sec Chenin, with variations from dry to sweet depending on the vintage. The widespread shift towards sweet wines occurred later, after the Second World War.
